Best Ever Guacamole
3 Ripe Avocados
¼ Cup Red Onion, Finely Chopped
¼ Cup Cilantro, Finely Chopped
One small Tomato, Chopped
3 Tablespoons Lemon Juice, Fresh squeezed
1 Tablespoon Lime Juice
1/2 of a Small Jalapeño
Put the avocados in a bowl and chop them up. I use a pastry blender. If you don’t have a pastry blender use a fork and a knife and slice and dice until you’re left with small chunks of avocado.
Add the rest of the ingredients, only stirring once they have all been added. Guacamole should be slightly chunky, not smooth.
Do a taste test and add a bit more of whatever is missing. Most of the time I end up adding a little more lemon juice and several shakes of salt.
It’s best to chill the guac and let all the flavors come out for at least 20 minutes before serving.
If you have leftovers, keep the pit from the avocado, put it in the bowl and sprinkle with lemon juice. Then cover with saran wrap, pushing it down into the guacamole so no air is getting to it.
